Peanut Butter Cookies!

When you have a craving for peanut butter these Peanut Butter Cookies will hit the spot. Soft, chewy, smooth and overall just tasty! These are quick and easy to make for the holidays, for birthdays or just because. Plus I bet you already have all of the ingredients on hand!

Main Ingredients Needed

8 simple ingredients come together to create these amazing Peanut Butter Cookies. Here’s what you need:

  • Butter – I like using salted butter, but you can always use unsalted as well. Just add a pinch of salt later.
  • Peanut Butter – use smooth peanut butter for creamy results! If all you have is crunchy peanut butter you can use that too.
  • Brown Sugar + Sugar – both are used to sweeten but the brown sugar is especially used to keep these cookies soft.
  • Vanilla – used to flavor.
  • Egg – for structure.
  • Baking Soda – these give some lift to the cookies.
  • Flour – to fill out the dough!

Preheat + Prep

Preheat the oven. Then line two baking sheets with parchment paper or silicone baking mats.

Make Dough

Cream butter, peanut butter, brown sugar, and granulated sugar together until light and fluffy. Add in egg and vanilla. Mix until combined. Stir in baking soda and flour until just combined.

Portion Out + Squish Down

Scoop into evenly portioned balls onto the baking sheets. Then with the back of a fork squish each cookie dough ball down, creating that classic criss-cross look.

Bake

Bake. Cool on the baking sheet for a couple of minutes then transfer to a cooling wrack.

How to Store Peanut Butter Cookies

To keep these PB cookies soft store them in an airtight container at room temperature for up to 3 days. My secret is to keep a slice of sandwich bread in the container. The bread is able to lend its moisture to the cookies as they are stored.

  • 1/2 cup butter softened
  • 1/2 cup peanut butter such as Jif
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 1/2 cups all purpose unbleached flour

Instructions
 

  • Preheat the oven to 350 degrees. Then line two baking sheets with parchment paper or silicone baking mats.
  • Cream butter, peanut butter, brown sugar, and granulated sugar together until light and fluffy. Add in egg and vanilla. Mix until combined. Stir in baking soda and flour until just combined.
  • Scoop into evenly portioned balls onto the baking sheets. Then with the back of a fork squish each cookie dough ball down, creating that classic criss-cross look.
  • Bake for 7-8 minutes. Cool on the baking sheet for 3 minutes then transfer to a cooling wrack.
