I’m skeptical of desserts baked in the microwave, for good reason too! They usually come out rubbery and gross. Not today, friends! This Mug Cake recipe is perfectly baked and ready to eat in 3 minutes flat! (Our blog isn’t called Best Desserts for nothing!)

Mug Cake Recipe

You’re only a few pantry ingredients away from chocolatey goodness. Here’s what you need to make a perfect chocolate mug cake:

  • Flour – this is to fill out the cake and to give it some structure.
  • Brown Sugar – to sweeten. You could also use regular sugar here, although I have found brown sugar yields a moister cake.
  • Cocoa Powder – this makes the cake chocolatey! Use unsweetened cocoa powder or even dark cocoa powder for a richer taste.
  • Milk – for creamy moisture.
  • Vegetable Oil – we are pulling out all the stops to ensure this cake isn’t rubbery. You can also use the same amount of melted butter here or another light oil. Warning: do NOT use olive oil, it has a stronger taste that will come through and taste not too great.
  • Salt – to help balance out all of the sweetness.
  • Vanilla – for flavor. Use the real stuff for best results, but if all you have is imitation, that will do too.
  • Coffee Extract – this is optional but brings out so much more chocolate flavor!
  • Ice Cream – top your warm mug cake with ice cream (vanilla, chocolate, etc.) Or consider topping with store-bought or homemade whipped cream.

No Eggs?

One of the best parts of this recipe is that it doesn’t include eggs! Which means you don’t have to worry about finding weird scrambled portions in your mug cake. Win win win! Also, feel free to swipe a taste of that raw batter. So good!

How to Make a Mug Cake

When it comes to mug cake it is ALL about simplicity. That doesn’t change when it comes to actually making it. For full details see the recipe card below.

  1. In a small bowl stir dry ingredients together.
  2. To the dry ingredients add the wet ingredients and stir to create the batter.
  3. Spray your favorite microwave safe mug with nonstick cooking spray. Pour in the batter and microwave for 45 seconds – 1 1/2 minutes. Absolutely start with 45 seconds and work your way up. Underbaked is better than overbaked!
  4. Keep the cake in the mug or turn it over onto a plate. Top with ice cream and enjoy!

Tips and Tricks

  • Overmixing. When mixing your batter, stir until all of the ingredients are just incorporated into each other. Overmixing leads to more gluten forming, creating a tough mug cake.
  • Overbaking. Overbaking also leads to rubbery like textures. Like I mentioned above, this batter is egg-free so always always always err on the side of underbaked. Start with 45 seconds in the microwave and work your way up. Definitely leave it a little gooey 😉
  • Toppings. My personal choice for this mug cake is vanilla ice cream but some other topping options are peanut butter, nuts, berries, fruit, chocolate chips, and whipped cream.
