Strawberry Jello Pie

Sweeten up your summer with this cool and refreshing Strawberry Jello Pie! It is light, creamy and so so simple! You just need a box of jello, some ripe strawberries and a great pie crust.

Whether I’m going to a friend’s house for a BBQ or just want a refreshing sweet treat, I love making and sharing this Strawberry Jello Pie. It is probably one of the easiest pies you can make (it takes a lot to mess it up!) and everyone loves it. Just make sure you give yourself enough refrigeration time for it to set, and you’re good to go.

Main Ingredients Needed

Believe it or not, this Strawberry Jello Pie only calls for 6 ingredients! SO simple and you will be drooling over the finished product.

  • baked pie shell
  • fresh strawberries-try to find the ripest, sweetest strawberries you can find!
  • water, cornstarch, granulated sugar– the main ingredients for the pie filling that is cooked in the microwave together until thick
  • strawberry jello-a big time strawberry flavor boost plus gelatin to hold the pie together

Making Strawberry Jello Pie

Versions of a strawberry pie with jello have been floating around families, communities, and church groups for years! It’s a bit of an old-fashioned pie that has absolutely withstood the test of time.

Whole fresh strawberries are washed, hulled, and placed upside down in the bottom of a pre-baked pie shell. The jello filling that sets and holds everything together is made with water, sugar, cornstarch, and jello concoction in the microwave and then poured over the strawberries.

After a few hours in the fridge, the entire thing is set and ready to go! Add lots of fresh whipped cream, cut into slices and serve. It’s so so good!

Storing Jello Pie

I think a Strawberry Jello Pie is one of the easiest items to store because it’s meant to be cold. After it is made and set, store the whole pie or any extra slices covered with the plastic wrap in the refrigerator for up to one week.

If you are planning on making this more than two days in advance, I’d recommend topping the pie with the whipped cream right before serving. Whipped cream tends to lose its air over the course of a few days, so it will start to liquefy on top of your pie beyond the two days. Still totally delicious and fine to eat, just gets a little sloppy.

A note about Pie Crust

So, we highly recommend using a homemade pie crust. Our All Butter Pie Crust is definitely a favorite and adds a big buttery bite to the overall finished taste of this Strawberry Jello Pie. I’ve also had great success with this Crisco pie crust recipe as well.

But, worst-case scenario, pick up a pre-made frozen pie crust from the store and blind bake it according to package directions. Ain’t no shame in that game. (Blind baking means to bake the pie crust empty before you would fill it.)

Ingredients
 
 

  • 9 inch pie crust blind baked
  • 2 cups strawberries fresh, divided
  • 1 cup water
  • 2 tablespoons cornstarch
  • 3/4 cup granulated sugar
  • 3 oz strawberry jello 1 small box
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Wash and hull strawberries. Place 1 1/2 cups of them upside down in baked pie shell and set aside.
  • In a small bowl or liquid measuring cup, whisk together water, cornstarch and sugar until mostly dissolved.
  • Microwave 1-2 minutes until mixture bubbles up and thickens. It should turn translucent.
  • Whisk in strawberry jello powder until dissolved and evenly mixed.
  • Pour jello mixture evenly over strawberries and refrigerate until set, 2-3 hours.
  • In a large bowl, using an electric hand mixer, whip heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form.
  • Remove pie from refrigerator and spread whipped cream over top.
  • Garnish with remaining 1/2 cup of fresh strawberries and serve cold.
