Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a stand mixer, cream butter and sugar together. Then add in egg, extracts and vanilla bean. In a separate bowl stir together baking powder and flour. Then combine the dry ingredients into the wet until a dough forms.
Form the dough into a ball and roll out onto a floured surface. Roll cookies out to be just over 1/4" thick. Cut out with cookie cutters and place onto the baking sheet.
Freeze for 5-7 minutes then bake for 10-12 minutes or until the bottoms are lightly browned. Cool on the baking sheet for 3 minutes then remove to cool completely on a baking rack.
