Snickerdoodle Chex Mix is basically snickerdoodle cookies in snack form! Rice cereal coated in white chocolate then tossed in cinnamon sugar.

- 9 cups Rice Chex cereal one full 12 oz box
- 1 1/4 cups white chocolate chips
- 1/2 cup salted butter
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
Line a baking sheet with parchment paper and set aside.
Place Rice Chex into a large bowl set aside.
In a small bowl, stir together granulated sugar and cinnamon.
In a double boiler, melt butter and chocolate together until completely smooth.
Pour chocolate mixture over cereal and stir to coat as evenly as possible. Do your best to work quickly.
Sprinkle cinnamon sugar overtop the coated Chex and toss to coat.
Spread onto a parchment paper lined baking sheet to harden.
Refrigerate for 5 minutes.
Remove and store in airtight container for up to 5 days at room temperature or 10 days in the refrigerator.
