I originally found this Cinnamon Streusel Coffee Cake recipe in a magazine years ago. After a couple of tweaks I’ve made it the best tasting and easiest coffee cake ever. Made with graham crackers, boxed cake mix, and cinnamon-sugar, you can have this recipe done in under an hour!
Ingredients Needed for Coffee Cake
Eight simple ingredients and a couple of minutes later and you are ready to bake this sucker! Here’s what you’ll need:
- Graham Crackers – if you can’t find graham crackers just look for an alternative. For international readers, plain digestive biscuits would work! You basically just need a sweet cracker.
- Brown Sugar and Cinnamon – to sweeten and flavor the streusel.
- Walnuts – either use walnuts or pecans or a mixture of both! These provide a great crunch and nutty flavor.
- Butter – butter brings the streusel together.
- Yellow Cake Mix – you’re going to want to find a regular size of yellow cake mix along with all the other ingredients needed to make the batter (usually eggs, oil, and water).
- Powdered Sugar and Milk – these two are used to make a simple icing that takes this coffee cake over the top!
Tips and Tricks
- Streusel: while making this recipe you might think “that’s way too much streusel”. To this I say don’t worry friend, it will all come out perfectly balanced with the cake.
- Baking Pans: you can use either a regular baking pan for this coffee cake recipe or a glass pan. Using a glass pan yields softer edges while a regular pan might turn your edges crispy.
- Mixing: there’s no need for a stand or hand mixer! All you need are some bowls, a whisk, and some muscle.
- Glaze: the glaze is optional but I highly recommend it! Not only does it make your cake prettier but it tastes one million times better too.
How to Make Coffee Cake

- Preheat the oven. Spray your baking dish with nonstick cooking spray and set aside.
- Combine graham cracker crumbs, brown sugar, walnuts and cinnamon in a small bowl. Stir in melted butter. Set aside.
- In a separate bowl prepare cake mix according to the package directions.
- In prepared baking pan, pour half of the cake batter then top that with half of the streusel. Carefully spoon the rest of the cake batter over and then finally sprinkle the rest of the streusel on top.
- Bake until a toothpick can be inserted and comes out clean.
- Prepare the icing by stirring the milk and powdered sugar together. Drizzle over the slightly cooled cake.
Enjoy warm with coffee, milk, hot cocoa, etc.
How to Store Coffee Cake
Store Cinnamon Streusel Coffee Cake in the fridge, on the counter, in your freezer, pretty much anywhere to keep it nice and fresh.
- Room Temperature: store in an airtight container for two days max!
- Fridge: once again, airtight container, but this time for up to a week.
- Freezer: skip the icing, wrap in plastic wrap then in a freezer safe airtight container for up to 3 months!
Coffee Cake is best eaten warm so reheat it in the microwave in 10-second intervals.
